چکیده

Al~traet--The industrial sterilization of canned foods is a process in which there usually occurs a degradation of the nutrients and a deterioration of the qualitative properties due to the temperature to which the food is overexposed in order to assure sterilization. In this work we face the problem using optimal control methods. Linear constraints on the control and nonlinear ones on the state will appear as a consequence of the technological restrictions and the request for quality and economy. Besides an existence result for the optimal control and an optimality system we give numerical results for some real industrial examples. They show that present industrial sterilization processes can be improved in terms of saving energy and nutrient retention.

The Exact Solution of Min-Time Optimal Control Problem in Constrained LTI Systems: A State Transition Matrix Approach

In this paper, the min-time optimal control problem is mainly investigated in the linear time invariant (LTI) continuous-time control system with a constrained input. A high order dynamical LTI system is firstly considered for this purpose. Then the Pontryagin principle and some necessary optimality conditions have been simultaneously used to solve the optimal control problem. These optimality ...

Learning control for batch thermal sterilization of canned foods.

A control technique based on Reinforcement Learning is proposed for the thermal sterilization of canned foods. The proposed controller has the objective of ensuring a given degree of sterilization during Heating (by providing a minimum temperature inside the cans during a given time) and then a smooth Cooling, avoiding sudden pressure variations. For this, three automatic control valves are man...

Mathematical Modelling and Simulation of the Thermal Processing of Anisotropic and Non-homogeneous Conduction-heated Canned Foods: Application to Canned Tuna

Thermal processing of conduction-heated canned foods is modelled using three approaches: (A) homogeneous isotropic, (B) homogeneous anisotropic and (C) nonhomogeneous anisotropic systems. Based on these models, numerical simulations are performed, using finite differences and finite elements methods. The simulation results are validated with experimental data obtained from the sterilization of ...

Improving canned food quality with variable retort temperature processes

Canned foods have a long history and are likely to remain popular for the foreseeable future owing to their convenience, long shelf life and economy. Thermal sterilization of canned foods is such a mature technology that it might be supposed that there is little potential for further development but, in fact, the technology continues to evolve. Recent developments have been directed towards bet...
